LOLA’s talented chefs take their cues from the soulful vibe of Coastal Mexico. While the regions of Oaxaca, Yucatan peninsula, Baja, Veracruz and the Northern Pacific Coast influence the dishes, it is the use of seasonal, local and sustainable ingredients that give LOLA her contemporary feel. With the kitchen mantra “somos artesanos,” (we are craftsmen) the chefs are able to stay focused on the many traditional crafts of mexican cooking while adding their own creative spins.
